One of my favorite breakfasts includes one or two drippy over easy eggs on top of a huge pile of bite size, well done tators and either bacon or sausage depending on my mood. When I make over easy eggs for myself, like these here…I always use a little lemon pepper to freshen up their flavor. That’s a trick I learned from my friend Connie about 6 years ago. My homemade tators tend to have a kick of heat to them and are always cooked till they’re a bit crispy on the edges. For me there’s nothing worse to me than an under cooked tator.
When I actually go to eat this breakfast…it doesn’t stay pretty. It gets all mixed up together like you see on my fork here in the next photo. Yummy!
