I created this breakfast casserole after making a ton of different ones throughout the years and being disappointed in most of the ones I’d tried. There are layers and layers of breakfast favorites all in one hearty casserole. I love how solid it becomes and how you can slice it and plate it without it falling apart! It’s great for company, a potluck or a busy week. It reheats wonderfully.

Layer 1-Fried potatoes cooked with onions, garlic and peppers
Layer 2- Cubed bread (I use wheat)
Layer 3- Browned sage sausage (could substitute sausage for cubed ham)
Layer 4- Cream cheese dallops
Layer 5- Sliced tomatoes
Layer 6- Shredded cheese
Layer 7- Sliced green onions
Layer 8- Crumbled cooked bacon
Layer 9- Egg mixture

Heather’s Hearty Breakfast Casserole
8 oz cottage cheese
1 1/4 cup milk
2 dashes tabasco
salt & pepper
1 pkg sage sausage
1/2 pkg bacon
3-4 large potatoes (peeled & sliced thin)
1/4 cup bell pepper (chopped)
2-4 sliced of wheat bread
1/4 block of cream cheese
1/4 cup green onions or red onions (chopped fine)
8-12 oz of colby jack cheese (shredded)
Vegetable oil or olive
Preheat oven to 350 degrees. Brown sausage and drain the grease. Brown bacon, drain grease and crumble. Set aside. Fry potatoes in oil with chopped onion, salt, pepper and bell pepper. You could also use left over roasted potatoes if you thinly slice them.
Any of the above can be done the day before serving and kept in the fridge until ready to prepare.
Grease bottom of casserole dish with butter or spray pam. Place potato and onion mixture in the bottom of the dish leaving no gaps in a single thick layer. Chop bread into 5 rows and dice. Scatter bread on top of the potato mixture as evenly as possible. Sprinkle prepared sausage on top of the potato & bread. Slice cream cheese into several small pieces and place them scattered on top of the sausage. Thinly slice the tomato and place the slices over the sausage, but not on top of the cream cheese. Sprinkle a couple ounces of cheese on top of the casserole. Sprinkle green onions or red onions & the crumbled bacon on top.
Mix the first 5 ingredients together with the remaining cheese in a separate bowl. Pour the mixture on top of the casserole and bake covered for 45 minutes. Uncover and continue baking until golden on top (about 15 more minutes in my oven).
