These aren’t guilt free…but they sure are tasty! As if mashed potatoes aren’t amazing enough the old fashioned way…adding a few more ingredients and tossing them in a hot oven really takes them to another level. They are heavenly with a big serving of some Sticky Sweet Ribs! They will also go well as a brunch item. 🙂
Baked Cheesy Mashed Potatoes-Just one of the many variations I’ve tested & love.
4 lbs potatoes cooked and drained
3/4 cup grated or chopped onion (1 tsp onion powder or 3/4 cup chopped green onions can be substituted)
1/4 cup real butter
1 10 3/4 can cream of celery or cream of chicken soup
1 pint sour cream
1 1/2 cup shredded cheddar cheese or any smooth melting cheese you love
salt (to taste-a couple dashes is good)
pepper(to taste-a couple dashes is good)
cayenne pepper (up to 1/4 teaspoon)
1-2 cups corn flakes
1/4 stick of butter (melted)
Prepare a large casserole dish (13×9 or equivalent) with cooking spray. Mash potatoes in a large pot and set them aside. Using a different sauce pan, saute onions in butter for at least 5-6 minutes (stirring often). Stir in soup, sour cream & seasonings. Gently heat over low flame until warm. Pour this mixture over the potatoes. Add in the cheese and stir well. Cover and refrigerate overnight. Heat oven to 350 degrees. Remove from refrigerator and sprinkle top with corn flakes. Melt the 1/2 stick of butter and pour it evenly over the corn flakes. Bake for up to 1 hour.
